Brown Butter Rice Krispie Treats

I don’t know about you but a quintessential snack in our house in Rice Krispie Treats. Whether it’s for school/after school or even camping, heck i have even made these for birthday parties, it’s an easy make ahead treat that satisfies young and old.

For the longest time I actually never tried making Rice Krispie Treats, I am sure you have all tried a batch that were over cooked and harder than a rock. I was fine just buying the Dream Bars from Starbucks when I had a craving. But then I seen the Brown Butter Rice Krispie Treats recipe in the book Cereal Sweets & Treats from Jessica Segarra, I knew I had to try them. (I would highly recommend this book ps. there is a lot of great recipes I’d like to try.)

There is just something about brown butter that is so delicious. I love the salty nuttiness, plus mix that with the sweetness from the marshmallows, I was sold. I am all about salty and sweet snacks. So I had to give this a try, plus it’s so easy!

Ingredients you will need:

  • Unsalted butter
  • Mini marshmallows
  • Salt
  • Rice Krispies
  • 9×13 pan
  • Parchment paper

Brown Butter Rice Krispie Treats

The perfect snack that is salty and sweet.
Course Dessert
Servings 12 pieces


  • 1 cup unsalted butter
  • 1 bag mini marshmallows (16-ounce)
  • 1/2 tsp salt
  • 8 cups Rice Krispies


  • Grease a 9×13-inch pan and set aside.
  • In a large nonstick stock pot, melt butter over medium-high heat. Cook, stirring occasionally, until butter turns a deep golden color and you see a few dark flecks. Add the marshmallows and salt, and stir until marshmallows are completely melted. Remove from heat and fold in Rice Krispies until well coated.
  • Optional- Stir in a handful of marshmallows, once Rice Krispies have been added for just a little bit more gooeyness.
  • Transfer mixture to prepared pan and place parchment paper on top and push down until even. Once cooled, cut into squares and serve. Can be stored in an airtight container.
