Quick Oatmeal Chocolate Chip Cookies

Last fall a dear friend of mine came to visit myself and Clive, he was only a month old. One of the gifts she brought me was these cookies. I didn’t have a good Oatmeal Chocolate Chip Recipe but as soon as I tasted these they hit the spot! Not sure if it was a mix of being 1 month postpartum and nursing or the fact that with a newborn and a toddler you never know when your next meal will be. But this was my favourite just had a baby gift. I think the easiest way to get a quick visit with a newborn is always offering food or a drink for the Momma. I will never turn down a good coffee or a treat.

I have made these cookies SOOOO many times since my friend gave me the recipe. It’s such an easy cookie recipe. Pierce loves to help with all the dry mixing and putting the ingredients together. He also really loves stealing a few chocolate chips, I’d be lying if I said I didn’t join him. There’s nothing better than including your kiddos in the kitchen.

Also have a I mentioned how I love collecting recipes from people that I care about. It definitely a lost act. I find so many great recipes on Pinterest, but I always make an effort to hand write my favourites into a sweet little book I have. There’s something so magical about handwriting and embellishments of ingredients on the pages. I love being able to write the date I received them and who I acquired them from. As the time goes on I plan to share all my favourite recipes because this space was created for the “Art of Sharing”.

I love using an ice cream scoop to portion out the cookies. Makes them all the same size so they all bake evenly which means they all taste equally delicious.

Easy Oatmeal Chocolate Chip Recipe

Easy and delicious oatmeal chocolate chip recipes. Makes for great freezer cookies too.
Cook Time 10 minutes
Course Dessert
Cuisine American

Ingredients
  

Wet Ingredients

  • 1 cup butter room temperature
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 tsp hot water

Dry Ingredients

  • 1 1/2 cup flour
  • 2 cups oatmeal
  • 1 tsp baking soda
  • 1 cup chocolate chips

Instructions
 

  • 1. Preheat oven to 375°
    2. Cream together wet ingredients
    3. Mix together dry ingredients in medium size bowl
    4. Carefully scoop dry mixture into the wet mixture.
    5. Once mixed together, scoop cookies onto a parchment lined cookie sheet
    6. Bake for 10 mins.
